Recipe: Meatball and Mozzarella Subs With a Tomato Sauce

Making a meatball sub with a tomato sauce a bit like what Subway call a Meatball Marinara is relatively easy, you just need a bit of time during which you can knit, watch cricket, or read a book, with a nice glass of red wine.

Working time: 30 minutes
Feeds: 4

Ingredients

4 medium ciabatta rolls, you can bake your own but I just bought some fresh from the store.

The Meatballs

500g minced beef
500g minced pork
An egg
Some breadcrumbs
Some olive oil
Some wheat flour
Some salt and pepper

Sauce

Glug of olive oil
400g canned tomatoes
1/2 teaspoon black pepper
2 bay leaves
1/2 teaspoon of salt
1 teaspoon of crushed garlic
2 teaspoons paprika, Spanish style smoked preferable
A handful of basil leaves
1 cup of freshly grated mozzarella
1 large white or yellow onion
1 cup red wine
2 tablespoons tomato puree
3 teaspoons brown sugar
1 cup chicken or vegetable stock
3 tablespoons Greek or thick yoghurt
1/2 cup freshly grated parmesan
Glug of balsamic vinegar
